That may just be some residual energy given off by the saber. The fact that we've never seen lightsabers bend elsewhere draws this into question.

Could just be due to an FX error. The metal bending.
After all, I found a part in AOTC that shows that Ki-Adi-Mundi's light saber goes from blue to green and then back to blue.

The first sabers had a plastic core like in the toys, so we are probably seeing the plastic bend on impact.
