Situation
The mandolorian neo crusaders won the mandolorian wars easily - Revan never intervened. As the bored mandalorians rule the galaxy, they discover a wormhole leading to a relatively isolated point in the milky way galaxy. The mandalorians construct a forward base and send some probes out to look for new hyperspace routes and civilisations to conquer. (Probes are successful, but which ST group they find is up to you)

The Mandalorians never get into the Trek galaxy due to killing each other as they have no external enemy, and hence each one goes for a power grab, leading to the Mandalorian Empire falling apart within a decade.

The Mandalorians, now united and looking for new worlds to conquer, discovers a wormhole to the Milky Way, right between the Dominion and the Borg. There, now they can have all the conquest and war they want, and face off against two opponents who will give them a sufficient challenge, or at least enough of one to satisfy their need to stay united.

Once they map out the new galaxy, which will take time, they crush all resistance. Everywhere. Until they meet the Borg....

Mandalorian Culture is founded on strength, and challenging those who are above you for honor or to take over their position. If the Mandalorians really conquered the Republic, they would have nowhere else to look but at each other, and every single Mandalorian would be wanting to become Mandalore. It's established in Knights of the Old Republic I and II that this is what they do. They fight for they love the challenge of a fight, and when the only enemy around who would be strong enough would be other Mandalorians, that's all they have left.

What about the Sith Empire in the unkown regions? The mandalorians could also fight that lot. But say the mandalorians actually do find one of the ST civilisations. What happens then?

If they found the Sith Empire, there wouldn't be much interest in the ST galaxy for a while, as they'd be a bit busy dealing with a full on war again. If they found the ST galaxy before then, the Borg or Dominion would be a challenge, as both have the numbers and industrial capacity to threaten them, if not the firepower, as I'm unsure of KOTOR era power levels.
Of course, it'd be hilarious if they ended up in 29th or 31st century Federation, and a timeship just rewrote the time stream to prevent the Mandalorians from coming into the galaxy, or met something like the Space Amoeba or the space whale.

As far as KOTOR-era firepower, Darth Malak had his fleet perform a BDZ-style attack on Taris in the first game. Though unfortunately we don't know how long it took or how many ships were involved (we only see one cruiser, but others are mentioned). Also some people survived at ground level given SWTOR's assertion that the exiles to the surface made it to their promised land (only to find it wasn't much of a promised land).
Additional data point: Canderous mentions when you visit Kashyyyk that the Mandalorians considered invading it and that it would likely have required glassing at least a sizable portion of a continent to let their bigger war machines maneuver.
