Goldsmith IMO buries all other Trek Composers. His TMP theme is the best. I love that it didn't use the TOS fanfare. Horner was a fair second. (I like him but he recycles too much)

TOS has the best theme. Why? Because it's over in 30 seconds. This is very important if you sit down hoping for a hour long episode, and not a forty minute episode with 20 min ads.
The other ones, TNG, DS9, VOY and ENT, take over a minute to resolve. Of this lot, it's a tossup between TNG and DS9's first three season's theme. TNG's starts really slow, but has a very nice tune to it. DS9's is slow, and stays slow, but has a grand, majestic feel to it. DS9's later seasons changed the tempo of the music in order to sex it up, and manage to make a sound that is frankly unlistenable. Yes, DS9's theme was a minute longer than it should have been, but if you listen to it as a piece of music and NOT as a precursor to the action of the episode, it sounds much better than the shit that they changed it into.
VOY's is alright, and one of the things I liked about the show was the theme. It too had a majestic feel to it, but it also evoked a sense of loneliness the show was aiming to capture, and you can't fault the composer for that.
ENT's is... shit. Well, no... more thant that. It isn't STAR TREK. It isn't grand, it isn't majestic, it isn't over in 30 seconds. It has words. The song is just so out-of-place that I don't even know what feeling it was trying to invoke within me.

I liked the First Contact theme, best rendition of the TNG theme in my opinion.

Hm, my favourite Star Trek song:
The USS Make Shit Up by Voltaire wrote:I was stranded on a planet, Just me and Spock
We met a nasty nazi alien who locked our asses up
We found a hunk of crystal and a metal piece of bed
We made a laser phaser gun and shot him in the head
Bust a move, Tog
I was standing on the bridge when Sulu came to me
His eyes were full of tears he said "Captain, can't you see
the ship is gonna blow do something I beseech"
I grabbed a tribble and some chewing gum and stopped the warp core breach
And I say,
Bounce a graviton particle beam off the main deflector dish
Thats the way we do things, lad, we're making shit up as we wish
The Klingons and the Romulans pose no threat to us
'Cause if we find we're in a bind we just make some shit up
And though he's just a child, and some think him a twit
Wesley is the master when it comes to making up some shit
He's the guy you want with you when you go out in space
Now if only he could beam those pimples off his face
And if you're at a party on the starship Enterprise
And the karaoke player just plain old up and dies
Set up a neutrino field inside a can of peas
Hold on to Geordi's visor and sing into Data's knee
And I say
Bounce a graviton particle beam off the main deflector dish
Thats the way we do things lad, we're making shit up as we wish
The Klingons and the Romulans pose no threat to us
'Cause if we find we're in a bind we just make some shit up
Sisko's on a mission to go no bloody place
He loiters on a space station above Bajoran space
The wormhole's opened up and now they come from near and far
We'll keep the booze but please send back the fucking Jem-hadar
What is with the Klingons, remember in the day
They looked like Puerto Ricans and they dressed in gold lame
Now they look like heavy metal rockers from the dead
With leather pants and frizzy hair and lobsters on their heads
And I say
Bounce a graviton particle beam off the main deflector dish
Thats the way we do things lad, we're making shit up as we wish
The Klingons and the Romulans pose no threat to us
'Cause if we find we're in a bind we just make some shit up
Well, I was stuck on Voyager, pounding on the door
When suddently it dawned on me I've seen this show before
Perhaps I'm in a warp bubble and slightly out of phase
'Cause it was way back in the sixties when they called it "Lost in Space"
We were looking for a way to make the ratings soar
So we orchestrated an encounter with the Borg
Normally you'd think that that would get us into shit
But this one has a smashing ass and a lovely set of tits
And I say
Bounce a graviton particle beam off the main deflector dish
Thats the way we do things lad, we're making shit up as we wish
The Klingons and the Romulans pose no threat to us
'Cause if we find we're in a bind we're totally screwed but nevermind
We'll pull something out of our behinds, we just make some shit up

I like the First Contact one, and that of Undiscovered Country (although it's just a blatant rip-off of Mars, Bringer of War by Holst...)

One of my favorites was the piece used in "The Best of Both Worlds part II" when the Enterprise is launching the rescue operation to get Picard back.
I liked Leonard Rosenman's SDTK for ST:IV...I know it wasn't traditional trek music, but the entire CD is great, especially the hospital chase.
But my favorite all time piece is by James Horner...the opening theme to ST:III. The song to me captures a feeling of sadness and hope at the same time. Truly a moving theme.

I'm with Kurgan and Patrick on this one, even though Kurgan got it wrong.
It's
Star trekkin across the universe. On the Starship Enterprise, under Captain Kirk. Star trekking, across the universe. Boldy going forward 'cause we can't find reverse.
It's life, Jim, but not as we know it, not as we know it, not as we know it, it's life, Jim but not as we know it, not as we know it, Jim.
Great. Now you've made me dig out that goddamned tape AND my tape recorder again. I hate you people.
OT, I positively love Goldsmith's TMP theme, and by extension the TNG one.
Speaking of songs in Trek...

Speaking of songs in Trek, there was one piece of music that was used that I have been searching for. I don't know the name of it, but it was used during the Preview for the episode "Chains of Command Part II". It was also in the first few minutes of the movie Time Runner with Mark Hamill, when the helicopter flies in and lands. Anybody?
On another note, there was a ST:TNG techno made about ten years ago by U96, a german techno outfit. Kinda cool song. Wish I still had the original CD.

There was no TNG theme. They just played a really crappy version of the TMP theme during the opening credits.

Actually, Dennis McCarthy composed a theme, but it was unused in the series. It was on the ST:TNG Encounter at Farpoint soundtrack, the last track on the CD, I think. Paramount later used the song in one of those commercial trailers you see before a VHS or DVD starts up, where they hock all of the Trek movies and episodes at you at once.
By the way, the theme sucked balls. I'm glad they went with Jerry Goldsmith.
