Well, if we assume a constant torpedo speed, we can find out how far from Enterprise the asteroid is, and from that I assume we can get a rough idea of the size. I don't know how to do that, mind you...

You can generate a lower limit that it must be bigger than the dome on top of the Enterprise's bridge because it's farther away and has the same size onscreen, but that's it unless Howedar's torpedo-timing idea can be used (and that requires accurate data on the acceleration curve of the torp, as well as an estimate of the distance from the camera to the Enterprise, although the latter can be generated by examining the perspective distortion in the Enterprise's engines).Col. IIRC torpedos (at least in the movie era) tended to come out at full speed, but that's kinda pulled out of my ass.

The best way to get figures is to remake the scene in a 3D program.
Basically, one just needs to create a 2D plane, link a somewhat transparent screen-capture as its texture, and attach it to the camera lens.
Place and size the Enterprise and torpedo objects where necessary, and then record their position for that frame as a keyframe. Change the texture to the next screen capture, goto the next frame in the program's timeline, and move the objects again. Continue this, and you should get enough data on the velocity or acceleration of the torpedo to be able to extrapolate a rough estimate of the asteroid's size and distance.
