Galaxy-X vs Scimitar
In this scenario the Scimitar defeats the Enterprise-E with no damages in return, it is fully operational to 100%.
The ship continues to its course towards Earth, thinking nothing can stand in their way. Unknowing to them the Federation has launched a new super ship, the Galaxy-X, it is fully crewed and tested so there are no bugs in her systems. The ship has the same tech from the alternative future brought to this reality thanks to Q and with some special sensor technology, she can easily scan through and detect any cloaked ships, and she stumbles across the Scimitar heading for Earth, which the very talented and war hardened (Dominion war) captain orders to be intercepted.
The Scimitar realizes she cannot outrun the new Federation warship so she stands and fight instead. The Galaxy-X drops out of warp total battle ready and without any reinforcements from the either side, the outcome can decide the fate of the entire Alpha Quadrant. Who wins?

The small number of torpedoes fired fired by the Enterprise in the battle along with a small number of disruptors dropped the Scimitar's shields to 70 %.
The Galaxy-X phaser cannon can destroy Klingon Neghvars which are supposed to be very powerful with just one shot.
So in my opinion the Scimitar's shields dont chance agains the Galaxy-X's phaser cannon.

And those weren't Negh'Vars. They were somewhat smaller.

The Gal-X has a cloak too, does it not?
Anyway, I can see it performing phaser sweeps until it hits the Scimitar. The instant it hits, it fires a tractor beam to slow the Scimitar down slightly, and more importantly, highlighting it for weapons. Bam, mega-phaser cannon hits, and the Scimitar loses a TON of its shields

The Scimitar was very maneuverable for something of its size. If it could avoid the bow of the Galaxy-X, it may be able to hammer away at the Fed ship and destroy it. If it survived any initial hits from the heavy phaser cannon

As to the thread in question.
The Galaxy-X design is 15-20 years more advanced then the Scimitar. Its significantly faster (so much so that the warp scale got changed again) and has a large number of improvements. The Galaxy can still use its forward torpedo launcher and it has more phasers then the old Galaxy. The Galaxy-X will be more then sufficent to destroy the Scimitar. Quantum Torpedoes were able to bleed through the Scimitar's shields and cause damage to some of the systems. The Phaser Cannon is more then sufficent to penetrate the shields. It might not skewer the Scimitar outright (The Klingon ships ocassionaly wasn't penetrated by the beam) but it will cause massive damage.

You have to wonder now if the Galaxy-X wasn't/won't be developed as a direct response to the Scimitar
I mean, besides a few minor character-life changes, there are some nice parellels between the Galaxy-X future timeline Q made and the real one.

It is hard to say how many photons they fired. On one hand the dialogue says they depleted their photon complement but on the other hand the audience only sees a handful number of photons fired. There is a small possibilitie the Enterprise did not have a full torpedo complement and the small number of photons seen fired was all she had.Actualy the Enterprise fired a very large number of torpedoes. There is a greater possibility that the Enterprise fired photons offscreen. In order to remain fair in my estimation of the torpedoes fired I examined the known footage we had available and counted how many torpedoes were fired in the time frame. The Enterprise fired almost 200 torpedoes in the battle using that estimate.
