Recommendations as to what can be interesting in the towns apart from the ordinary sights listed on Wikipedia would be also welcome. And any food tips.

Yeah; eat fucking loads! I loooooooooooves me some paella. Which is really a recipe that came about to use all the 'left overs' (as most peasant dishes around the world are), but it's fucking great. Go for the seafood one nom-nom-nom.

Alas, I am stuck in northern Spain and my suggestions for Barcelona and (particularly) Seville are years out of date.

I might be able to give a few worthwhile suggestions for Madrid, though.

Cheap eating in Madrid. Im almost in Lisbon, Barcelona and Sevilla are way behind now.
