I'm considering doing an ST story but I have very little knowledge about ST canon.

What I'm looking for is basically everything canon in ST, tech specs, detailed galaxy maps and what not I can download for off line use , but yet I have no real idea of what is canon or not so any help or advice will be welcomed and thanks in advance for you're help.

The TV shows and movies are canon. I'm not sure about the animated series.

Everything else is not canon.

Memory Alpha is probably your best friend here.

DITL is also very good, as both a source of canon data and ideas. GK made a point of clearly distinguishing between what came from the screen, the books, and his own fanfic backstories.
