Well it's actually pretty simple, use a $5 disposable camera. Mountain biking and expensive cameras do not get along.

It should be noted that I can take perfectly focused pictures given a proper camera, like this one, and this one too.

Very much so. Frankly, I've never been able to figure out how those people who get kidnapped and then free themselves by alerting the police with images of the kidnapper's license plate manage it; I can barely see anything with even a point-blank shot on mine.

To be honest, I always figured camera phones would suck just by looking at them. My feeling is that anything with such a tiny opening for a lens must be shit.
