But, if they had time, they could use drop the saucer section off near a starbase and then go back after their enemies. It's kind of a good ability, even if its utility is somewhat limited. I guess it's one of those options that they have, just in case.

sure it leaves them options but it also adds a massive structural weakness to the vessel. those clamps can't be all that strong

Irrelevant if this is a structural weakness or not, since the ship will explode anyway after several direct hits to the hull.
When the warp core goes up, it doesn't matter if the clamps will hold or not.
Btw, the separation feature would make sense if the saucer had a pair of spare nacelles and a torp launcher or two.
But in it's present state, the only thing you can do is use it to draw the fire away from the engineering section.

the whole increadible 'Sploden warp core thing. the Imperials could infiltrate a spy to sneeze on the core during combat.

Actually, the "structural weakness" between the saucer section and the warp drive was actually a safety precaution. That way, if the Warp Core began to destabilize, they could try to evacuate the main hull and get everyone in the saucer section. They could then use the saucer section as a kind of lifeboat to get everybody out of the area before the warp core totally destroyed itself and the ship.

The necessity of this measure is essentially an admission that the warp core is an extremely unstable source of power. It would not be necessary in the Empire.

Perhaps they retired in the same way that the Replicants in Blade Runner retired. It would be a threat to the UFP if smart engineers actually won a war against the Romulans & Klingons, since they can't do that "we threatened so give us better weapons" routine.
