I took it as Sam figuring out that the Maesters were going to be of no help. An old and broken, stagnate organization. Maybe we'll see more of them in season 8 with Qyburn or something. Seems a rather disappointing plot turn to me.

Maybe he's got one of the books with clues about how to beat the Deadites. Or he might just confirm what was already hinted at: Kill the White Walkers and the wights die too; kill Blue Darth Maul and kill the Walkers.
