Dragons(Converting Dragon PC rules to 3rd edition.. Will be done in a few years...). You can't have fantasy without dragons. I dunno why.

1) Dragons. Definately Dragons. I've always had a love for them, ever since I was a small kid.

2) Dwarfs (aka Dwarves). Dwarfs are quite cool.

3) Undead (though I don't know if you'd call them a race in the strictest sence of the word)
