The show has made me more interested in the Summer Islanders from the book.

Seeing Jamie's Iron hand in the trailer reminds me of a question I had while reading the books...
Why does Jamie use the iron hand rather than some sort of apparatus that he can strap a sword to? I understand the ability to change grips is important to sword play, but given his skill in his non dominant hand this would be an improvement.

It actually wouldn't. It's not so much the lack of hand as it is the lack of wrist. A huge amount of the fine manipulation of position of the blade comes from movement of the wrist. I can't even imagine an angle he could affix the blade at that would allow him to both parry and cut effectively.
