They can certainly manipulate fire, water, earth and air, but the classical elements don't have particular significance.

But AK won't need a no-limit argument to make it work in MtG. There are spells that cannot be countered by any counterspell in MtG so you can easily imagine AK being one of those. As for the times when it doesn't work, you can imagine something somehow make the target become invalid (ie, add protection from a color as instance , just for an idea) and it will still be "countered" by the game rules.
