Surviving in vacuum is actually pretty easy compared to some of the other things we see Jedi survive in canon. Anakin and Obi Wan fought for a protracted period in a far far more hostile environment (Mustafar). The heat would have killed them. The volcanic gasses (hydrogen sulfide and sulfur dioxide) would have killed them. Hell, those same toxic gases are heavier than oxygen so lack of oxygen would have killed them. The temperatures would have burned their lungs long before Anakin got de-limbed.
If they can survive that, simply using the force to sustain them in vacuum should be easy.
