I wouldn't take that figure as accurate anyway. Remember Phlox just had a basic crash course in how to run the ship, so he couldn't be too accurate. So of course anything T'Pol said wouldn't be right, since she was just a hallucenation anyway

Even if the Defiant only had rations and not replicator...which it does have...you do realize that the Defiant is not designed as a long duration warship yes? Its always docked somewhere when not in use, unlike a GCS which stays out for months or years at a time.

How does the Dominion War Galaxy compare to the Klingon War Galaxy as seen in Yesterday's Enterprise? Just watched the episode and it was taking multiple hits from 3 K'vort class battle cruisers before it even started to flinch

This kind of relates to the longevity of Excelsior class vessels. In one TNG episode Geordi's mother goes missing while commanding the Heracles. One of the ships the admeral said was searching was the Excelsior. Is this Sulu's old ship or a new one with the same name?
